Chef Jo has the fondest memories of going to visit her grandmother, Zoe, at her home in Montreal which she called "The Old Cookie Farm". There they would bake with the best ingredients they could find to create the most delicious and wonderful desserts.
Dutch Process cocoa powder yields a rich, dark and flavourful chocolate dessert. One of Jo's favourite recipes is a simple chocolate glaze for an every day cake that looks pro and takes only a few minutes to make!
Best Chocolate Glaze
For 1 x 9 inch cake, a loaf cake, 12 doughnuts or 12 muffins.
- 3 cups (300 grams) confectioners' sugar
- 3/4 cups (108 grams) cocoa powder
- 1/4 cup milk or water
- 2 teaspoons vanilla or flavouring
Pass the icing sugar and cocoa through a fine mesh sieve into a medium bowl to remove any lumps. Add in the milk or water and whisk well then add in any desired flavourings. Stores well in a container for 3 says. Might need 1-2 tsp liquid after storing.
Pour this shiny dark chocolate glaze over any cooked baked good for a pro look!
Makes about 1 cup of glaze
225g, 100% cocoa powder.
