The Very Best Crispy Pancake Mix! With Cinnamon Sugar :)


A recipe so good you'll want to make ever single weekend! We add fruits of chocolate or cocoa powder but our secret is giving you a bag of cinnamon sugar to create a doughnut like pancake coating.... and it's epic! 

Makes 8 large pancakes or 12-16 smaller pancakes.

Baking on the gas BBQ is a wonderful way to get vitamin D from the sun while making your favourite summer treats! We love to use a griddle pan and let the pan preheat with the lid closed for about 15 minutes. You want to simulate a medium to medium high heat then follow the directions on the package. You might have to close the lid several times to keep the heat in but these pancakes with crisp up beautifully outdoors. Add on all your favourite summer fruits! Unbleached Flour (Niacin, Reduced Iron, Thiamin, Riboflavin,Folate), Sugar, Baking Powder (Sodium Bicarbonate, Corn Starch, Monocalcium Phosphate), Salt. Cinnamon Sugar packet: Granulated Sugar, Cinnamon.

You Will Need
  • 2 cups of buttermilk 
  • 2 tbsp vegetable oil 
  • 2 eggs 
  • 6 tbsp vegetable oil 
  • 4 tbsp unsalted butter for frying

Reserve the sugar packet inside to use if making pancakes.

Using 1/2 the package, or about 1 1/4 cups plus 2 tbsp, place the mix in a medium bowl and add...

  • 1 1/4  cup of beer or water
  • 1 tsp salt
  • 1/4 to 1/2 tsp chili powder or hot sauce if desired

Mix well and let stand for 10 minutes. Cut fish as desired and season with salt. You can dredge the fish in flour using a small plate with 1/2 cup of flour if you are using a watery fish or simply batter it up and fry in a deep fryer or large pot with oil heated to 350F. Fry fish until golden brown and drain on a piece on paper towel set on a plate. Serve immediately in a taco with your favourite sauces and chopped garnishes and make this recipe for ever and ever! 

To use the rest of the package for pancakes simply follow the directions divided in two and use the reserved cinnamon sugar packet to coat.

Makes 8 thick, crispy pancakes OR makes enough fried fish to serve 4 people.
