Cookie Crunch Mix
A Zoe Ford original, this is one of the best things to have on hand for all your dessert needs- From fruit crumble to topping for fresh fruits, ice cream, yoghurt and more!
This is the best crumble topping for all your summer desserts- But out intention was for you to bake the crumb cookie topping on it's own and have it on hand for all your dessert needs! We just love a fresh fruit crumble with berries and ice cream and we also love to use it to top any dessert without fuss.
Makes 8 cups of Cookie Crunch
Jo's famous Summer Crumble Recipe
4 cups of berries or fruits (if adding rhubarb add a bit more sugar to balance tartness)
2 tbsp corn starch or flour
1/4 cup of sugar of your choice
1 tsp vanilla or 1 tbsp liqueur like cointreau
zest of 1 lemon or orange if desired
1/2 package of Maison Zoe Ford Cookie Crunch
Heat oven to 375°F. Grease bottom and sides of 9-inch square pan (or any baking vessel) with baking spray or some butter.
In a bowl mix the fruits and remaining ingredients. Prepare the Maison Zoe Ford Cookie Crunch as directed using half the mix and spread over the berries. Reserve the remaining mix for your next summer crumble or bake it on a sheet pan and store the cookie crumble for use of fresh fruits etc!
Bake about 30 minutes or until topping is golden brown and fruits are tender when pierced with a fork. Serve warm with ice cream or just on it's own!
