Unbleached Flour (Niacin, Reduced Iron, Thiamin, Riboflavin,Folate), Sugar, Baking Powder (Sodium Bicarbonate, Corn Starch, Monocalcium Phosphate), Salt. Cinnamon Sugar packet: Granulated Sugar, Cinnamon.
- 2 cups of buttermilk
- 2 tbsp vegetable oil
- 2 eggs
- 6 tbsp vegetable oil
- 4 tbsp unsalted butter for frying
TO MAKE BAJA FISH TACOS....
Reserve the sugar packet inside to use if making pancakes.
Using 1/2 the package, or about 1 1/4 cups plus 2 tbsp, place the mix in a medium bowl and add...
- 1 1/4 cup of beer or water
- 1 tsp salt
- 1/4 to 1/2 tsp chili powder or hot sauce if desired
Mix well and let stand for 10 minutes. Cut fish as desired and season with salt. You can dredge the fish in flour using a small plate with 1/2 cup of flour if you are using a watery fish or simply batter it up and fry in a deep fryer or large pot with oil heated to 350F. Fry fish until golden brown and drain on a piece on paper towel set on a plate. Serve immediately in a taco with your favourite sauces and chopped garnishes and make this recipe for ever and ever!
To use the rest of the package for pancakes simply follow the directions divided in two and use the reserved cinnamon sugar packet to coat.
Makes 8 thick, crispy pancakes OR makes enough fried fish to serve 4 people.
